We don’t define our food by borders. Our cuisine moves with the seasons, guided by nature and grounded in what’s available. We look to different regions for inspiration, while sourcing ingredients that are as seasonal and organic as possible.

Whether it’s our flatbreads made with UK-grown organic spelt, our chimichurri sauce made with seasonal organic herbs, or our meat and poultry sourced from British free-range animals, every dish reflects what the land has to offer.

Organic means no synthetic chemicals or GMOs, healthier soil and ecosystems, better animal welfare, and less pollution. We don’t say it because it’s trendy or as a marketing tool. We say it because over 90% of our ingredients are organic

All of our produce and dairy is organic. Our meat and poultry, though not organic, are thoughtfully sourced. Our chicken is free-range and fed a natural diet of apples and herbs. Our fish is always wild-caught.
